Speaking of skin… Crunchy Salmon Skin Chips

  • Salmon skins, the more the merrier!

    Sea salt

    3-4 cups of neutral oil (avocado, grapeseed, canola, etc.)

    1. Preheat your oven to its lowest temperature.

    2. Fill a large pot of water at least 2 inches. Bring to a boil.

    3. Fill a large bowl with ice water.

    4. Scrape any remaining guts & scales off the salmon skins.

    5. Drop each salmon skin in the boiling water for 20 seconds, then immediately shock the them in the ice water.

    6. Pat the skins dry with a paper towel. Place them flat on a parchment paper lined baking sheet. Be sure to unravel any skin that has curled up. Do not to overlap skins on each other.

    7. Place the skins in the oven for ~2 hours, until dehydrated. If your oven is over 180°F, leave it cracked open.

    8. Bring a pot of oil to 375°F. Break the skins into roughly 2-inch pieces.

    9. Drop a skin into the oil. It will sit at the bottom for a few seconds, then expand to triple its previous size. Remove after 5 seconds, before it gets too brown. Place skin chip on a cooling rack and repeat this step.

    10. Sprinkle salt on chips, to taste.
